Tofu Scrambled Eggs

When we started a plant based diet we were focused on all the stuff we couldn’t eat, but there are so many tasty cruelty free and healthy options. Just like this tofu scrambled eggs. You wouldn’t even taste the difference and it taste so good!


  • 1 1/4 cup Firm Tofu

  • 1 ½ cup mushrooms (sliced)

  • 1 1/4 of an onion (diced)

  • ½ cup halved cherry tomatoes

  • 1 Garlic clove

  • 1/4 Tsp Tumeric

  • 1/4 Tsp Cumin

  • 1/2 Tsp salt (or salt to taste)

  • Season to taste Instructions:

  • Heat a pan with oil and sauté the sliced mushrooms, diced union and minced garlic. Crumble the tofu in the shape of scrambled eggs and place it into the pan.

  • Add the turmeric powder, cumin, salt and pepper.

  • Mix everything together, so the tofu gets an even yellow colour.

  • Take off heat, add sliced tomatoes and stir again to combine.
