Avocado Pesto Pasta

Starting a plant based diet isn’t the easiest thing in the world. Mostly because our mindset gets in the way! People tend to think that vegan diets are extremely limited. We are here to assure you that your options within a plant based diet are limitless! We’re convinced that i try this pasta, you’ll get a taste for it!

We love us some Avocado! This pesto pasta is a easy to fix meal and has a flavourful creamy taste. This pasta won’t take away a lot of your time, because you will have it ready on the table in just 20 minutes!


  • 1 packet Pasta

  • 1 large Avocado

  • 1 cup Cherry tomatos

  • 1 cup Mushrooms

  • 2 cups fresh Basel Leaves

  • 1/3 cup raw Pine Nuts

  • 1 large Garlic clove

  • 1/2 Onion

  • 1/2 Tbsp Lemon juice

  • 1/4 cup extra virgin Olive Oil

  • 1 Tbsp Salt (or salt to taste)

  • 1/2 Tsp Black Pepper (or season to taste)

  • 1 Tsp Nutrional yeast*


  1. Boil the pasta with salt (season to taste) untill soft.

  2. Blend avocado, garlic, basil leaves and lemon juice and raw pine nuts.

  3. Add the olive oil, pepper and salt and mix untill smooth.

  4. Start cooking the mushrooms and chop the cherry tomatoes

  5. Take off the pasta and drain excess water.

  6. Place pasta and mixture in large bowl and toss.

  7. Add chopped up cherry tomatoes, sliced mushrooms and raw pine nuts as garnish.

Optional * Nutrinional yeast will give it a cheesy texture
